Carbohydrates are essential primarily for fibre. Otherwise, they are simply a good source of energy for the body. Though the body can manufacture carbs from protein and/or fats. Vegan foods tend to have no shortage of carbs. Cereals, root vegetables (potatoes, yams, cassava), fruits, and legumes (beans, peas, lentils) are vegan whole food sources of carbs.
